At Road 39 Ranch, we are not only producers of great quality meat, we are also consumers of our own products. Here are a few recipes we use to enjoy our products in case you want to eat like we do. These are practical recipes, prepared in our family's kitchen.
(Yes some of the cookware is 20 plus years old, but these are simple delicious ways to enjoy great healthy meat.) You will find the more unusual cuts here, Osso buco, Pork Belly, Brisket, Short Ribs etc. Many articles are written on how to cook the perfect steak. But there are many great cuts of meat that are delicious and much less expensive. We enjoy cooking and eating the lesser known cuts and thought you might too.
This is a great cut of meat that makes a delicious hearty meal.
Road 39 Ranch osso buco come 2 per pack about 1 1/4 lbs each with a large center bone.
This a great cut and slow cooks to a tender flavorful meal.
Chopped carrots, onion, celery and garlic. We add a 1/4 cup of wine.
Great one pot meal that is ready when you are.
Season with salt and pepper and a little corn starch, then brown in oil.
Combine the ingredients in a large deep dish, or crock pot, we cook low and slow covered (oven at 250 for 6 hours).
Serve over mashed potatoes, or rice. Tender beef, rich gravy, hearty meal.
This is a great cut of meat that serves many - great for backyard celebrations.
Road 39 Ranch Brisket comes in sizes 2 lbs to 5 lbs. We cook several for large get togethers and because leftovers make great sandwiches.
Road 39 Ranch Brisket comes trimmed and ready. The fat provides flavor.
Salt, Pepper and Garlic powder. That is it - we have tried many types, but we find simple is best when you have a great cut of meat.
Simple steps with quality meat - there are alot of great recipes on the internet - we prefer to keep things very simple.
Two to four hours on the grill around 200 -225 degrees F.
Wrap each piece in double aluminum foil. Cook in the oven or back on the grill another 2 to 4 hours.
Slice and serve - great with sauces, or in a sandwhich, or served with our favorite cowboy beans.
This is "Fresh Side" of Pork. This is the cut that bacon comes from. Also call Pork Belly
Road 39 Ranch Pork Belly "Fresh Side" comes whole or sliced - you need whole for this. It comes in various sizes up to 7lbs.
Pork Belly is very fat - that is where the flavor comes from. Cut the Pork Belly into 1 inch cubes.
Cover the cubes with your favorite seasoning (garlic, onion, cayenne) or a BBQ rub. Massage the seasoning in to completely cover the cubes. Then smoke or grill at low temp for 2 hours on a single stack rack.

Remove the cubes from the rack and place in an aluminum pan. (This saves the juices) Add a half stick of butter, and sprinkle with brown sugar.
You can finish back on the grill or in the oven for another hour. With a half hour left add your favorite BBQ sauce .
This can be served as a main dish or a great appetizer.
